No amount of chefs’ tricks and fancy ways with a knife are going to disguise poor raw ingredients. That’s why a chef’s relationship with his supplier is so important.

From gate to plate, I want to know everything about the meat I serve short of the animals’ actual names. Based in East Anglia, Direct Meats sources everything from local farmers it knows and trusts, actually buying the animals live and then using a small, locally run abattoir to guarantee their comfort and wellbeing. It might seem obsessive, but it’s worth it when you know that the beef you serve can be traced back to a small farm in the Dedham Vale.

Martin Blackwell and I set up Direct Meats in 1995, with a commitment to work with the very best of local producers to serve Britain’s restaurant and catering industry. Ten years on, I still feel a fantastic sense of pride when I see our food being served at some of the leading restaurants, and by the best chefs in the country. From the Le Talbooth in Dedham Vale to The Ivy and Gordon Ramsay’s Boxwood Cafe, I treasure the relationship we have established with such venues all over the country. What better I thought, than to bring this quality to the dinner table of the British public? And so Holts of witham was born!

I believe that fresh, locally produced meat tastes better. That’s why I appreciate the fantastic relationships we have with our local farmers, whose wonderful work ensures that the meat you eat really is the very best. All of the beef in our British Excellence range is from cattle reared in the rolling pastures of Dedham Vale, right in the heart of Constable County. We only work with farmers who rear their animals to the very highest of standards, as we know that a happy and healthy animal produces the best quality of meat. By working closely with a select group of local suppliers, we can ensure total traceability of our products, and guarantee consistency of the very highest quality. Best of all, this means our produce only has one big journey to make, the one its way to you.
